Calzones

Last night was a leftover casserole. We had to get to church on time last night for Good Friday Communion Service.
Tonight I made calzones. I threw bread dough ingredients into the bread machine. Waited an hour. Voila. Pizza dough. Cut up ingredients. Put it all together. Ron helped by filling his own very full. I sealed it up and cooked for 15 minutes. We heated the extra pizza sauce for dipping. Very filling and good.

Spaghetti

Last night was spaghetti. We had Ryan over for dinner. Mom and Jim are on vacation so we know he has been eating a lot of fast food. He admited that the salad was the first vegetable he has eaten in a week! Unless you count tomatoes and onions on his burgers or the salsa he had with tortilla chips. I put in carrots, onions, radishes, and mushrooms. Spaghetti is so easy. I love it. I threw together a salad and heated some garlic bread. Viola! Dinner. We had ice cream for desert.

Paperwork

Last night was paperwork night. For dinner I made it easy, I seared meat in a pan and then put it in the crockpot with butter and water for a 6 hours. I made mashed potatoes and a salad from our garden. That gave me some extra time. I was able to file a bunch of paperwork. I shreded old stuff, threw more away, and deep filed last years 'stuff.' It feels good. I hate paperwork because I have to do paperwork constantly at work.

Ckicken Fettucine Alredo

Last night after grocery shopping I got home and still had to make dinner. I ended up cooking some fettucine noodles (which are Ron's favorites) opening a jar of Alredo sauce. I cut of some chicken breast sprinkled them with Italian seasonings, cooked in a fry pan with just a little bit of evoo. I added some mushrooms and cut up celery. I rounded out the meal with a salad from our garden and some applesauce we canned last October. Ron loved it. The more I cook the easier it gets. Sometimes I almost think I am getting the hang of this cooking thing.
Ron didn't even know he liked Italian food. I have been making him eat it since we got married and he usually likes what I come up with. He is a little picky about the noodles he likes but is otherwise pretty easy.
